Description

This farmhouse style cider is made with the traditional method. At first, the
apples are carefully hand-picked, lightly washed, pressed then transferred to
a stainless steal tank for the alcoholic fermentation. The juice is then
pumped over and bottled. The second fermentation which feeds itself from
the natural yeasts and the sugar left from the apples starts spontaneously. A
touch of sulphite is added.

Farming: Sustainable.
Method: Traditional method, wild yeast, no added sugar.
Production area: 20 acres in Thiérarche, Picardie region.
Varieties: Sour apples: Pomme d’Adant, Collapuis, Mettais.
Age of the Trees: 30 to 50 years old.

Tasting notes:

Color: Light straw.
Aromas: Rustic nose, must, citrus and honey notes.
Palate: Fresh, dry, musty, candied citrus, bright acidity and refreshing finish.
Food pairing suggestions
Delicate cider to pair with seafood dishes, white meats like roasted pork and
delicate soft cow cheese.
Cellaring: To be enjoyed now up to two years.
